RECIPE: Dirty Banana Bread [Boozy!]

I've never been a baker... I'm not even much of a carbs eater... until quarantine, of course. Oh, everyone's making bread? Pinterest is showing me a TON of variations of fun bread? Gotta do it.

When I was on vacation last week, I had a dirty banana drink every morning. It's just bananas, Malibu rum, dark rum, pina colada mix and ice blended together, then poured into a drink that has some chocolate on the sides of the glass. It's lovely. It's a day starter, but I can't really have it every day while I'm working. It activates party-mode too quickly.

So I made a bread version.

I took this recipe, and made some adjustments... so here's what I did:

INGREDIENTS:

  • 2 cups all-purpose flour (about 9 ounces)
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup granulated sugar [I used a combo of white and brown]
  • 1/4 cup melted coconut oil
  • 2 large eggs
  • 1 1/2 cups mashed ripe banana (about 3 bananas)
  • 1/4 cup plain low-fat yogurt
  • 3 tablespoons dark rum
  • 1/2 teaspoon vanilla extract
  • 1/2 cup flaked sweetened coconut
  • Cooking spray
  • Chocolate of some form.. whether it be chips or syrup

TO DO:

Step 1

Preheat oven to 350°.

Step 2

Lightly spoon flour into dry measuring cups; level with a knife. Combine flour, baking soda, and salt, stirring with a whisk.

Step 3

Place granulated sugar and coconut oil in a large bowl; beat with a mixer at medium speed until well blended. Add eggs, 1 at a time, beating well after each addition. Add banana, yogurt, rum, and vanilla; beat until blended. Add flour mixture; beat at low speed just until moist. Stir in 1/2 cup coconut. Spoon batter into a 9 x 5-inch loaf pan coated with cooking spray; sprinkle with 1 tablespoon coconut. Bake at 350° for 1 hour or until a wooden pick inserted in center comes out clean. Cool in pan 10 minutes on a wire rack; remove from pan.

CHOCOLATE ADDITION: Throw chocolate chips into or on top of the batter, or do what I did: Drizzle chocolate syrup into the pan before pouring the batter. You could also drizzle syrup or something like Nutella on top after cooking.
